Zubereitung:
Pastinaken und Karotte schälen und in kleine Würfel schneiden. In einem Topf beides anschwitzen und mit 150 ml Wasser ablöschen. 15 Minuten garen lassen.
Nun die Butter, Flohsamenschalen, Eigelb und Thymian dazugeben und pürieren, bis ein glatter Teig entsteht, und dann für zwei Stunden im Kühlschrank ruhen lassen.
Aus esslöffelgroßen Teigstücken Kugeln formen (mit Handschuhen geht es leichter). In einem Topf Wasser zum Köcheln bringen und leicht salzen.
Knödel ins Wasser geben und abschöpfen sobald sie an der Wasseroberfläche schwimmen.
