Zubereitung:

Backofen auf 175 Grad (Umluft) vorheizen. Eiweiß und Eigelb trennen und das Eiweiß steif schlagen. Eigelb mit dem Magerquark, Backpulver, Mandelmehl, Flohsamenschalen und Salz vermischen. Eischnee vorsichtig unterheben.

Backblech mit Backpapier auslegen und den Teig auf dem Blech gleichmäßig verteilen. Für 15 Minuten backen lassen und danach das Backblech umdrehen, damit sich der Teig löst.

Die Dose Tomaten auf dem Teig verteilen und mit Oregano bestreuen. Rucola, Putenbrustscheiben und Mozzarella auf dem Teig verteilen. Den Teig rollen und das Ganze nochmal 10 Minuten in den Backofen schieben.
