Die Avocado halbieren, entkernen und das Fruchtfleisch in eine Schüssel geben.
In einem Topf 250 ml Gemüsebrühe leicht erhitzen.
Die Avocado pürieren und mit dem Magerquark verrühren. Die pürierte Masse in die Gemüsebrühe geben und mit einem Pürierstab zu einer cremigen Suppe rühren.
Mit Kräutern, Salz und Pfeffer abschmecken.
