Zubereitung

Butter, Eier, Buttervanille-Aroma, Zitronensaft und Erythrit in einer Schüssel miteinander vermengen.

In einer weiteren Schüssel die trockenen Zutaten vermischen. Die trockenen Zutaten, bis auf die gehobelten Mandeln, dann in die Butter-Ei-Masse unterheben und kneten, bis ein fester Teig entsteht.

Den Teig zu einer Kugel formen und eine Stunde im Kühlschrank ruhen lassen. Den Backofen auf 200° C (Umluft) vorheizen. Den Teig ausrollen (wenn er zu klebrig ist, zwischen zwei Backpapieren ausrollen) und Formen ausstechen. Der Teig sollte nicht zu dünn ausgerollt werden.

Backblech mit Backpapier auslegen und die Plätzchen darauflegen. Die Plätzchen mit den gehobelten Mandeln garnieren. 10–12 Minuten backen lassen.
