Zubereitung:

Buttermilch, Eiweißpulver, Eier und Natron in einer Schüssel miteinander verquirlen.

Die Bananen schälen und pürieren. Haferflocken, Walnüsse, Dinkelmehl miteinander vermengen. Alles miteinander vermischen bis ein glatter Teig entsteht.

Backofen auf 180 Grad (Umluft) vorheizen. Auf einem Backblech Muffinförmchen auslegen und den Teig in die Förmchen füllen.

Die Muffins ca. 20 Minuten backen
