Zubereitung:

Die Rote Bete waschen, schälen und in dünne Scheiben schneiden. Cocktailtomaten waschen und halbieren. Die Avocado halbieren, entkernen und in Würfel schneiden. Zwiebel schälen und ebenfalls in Würfel schneiden.

Auf einem Teller oder einer Platte die Rote-Bete-Scheiben, Cocktailtomaten, Avocado und Zwiebelwürfel anrichten. Anschließend den Mozzarella dazugeben.

Für das Dressing: Granatapfelkerne, Balsamicoessig, Salz und Pfeffer pürieren und über den Salat gießen.
