Zubereitung

Die Zucchini waschen und in Würfel schneiden. Einen Topf mit 300 ml Wasser zum Kochen bringen und die Zucchiniwürfel hinzugeben, das Ganze köcheln lassen bis Zucchini noch bissfest sind. Zucchini in einem Sieb abtropfen und abkühlen lassen.

Kichererbsen abtropfen lassen und zu einem Brei pürieren.

Tomaten würfeln und mit Zucchini, Eiweißpulver, Zitronensaft, Olivenöl und Currypulver in den Brei geben und alles miteinander vermengen.

Den Aufstrich in ein luftdichtes Schraubglas füllen und innerhalb von einer Woche aufbrauchen.
