Tomaten klein schneiden, Mozzarella würfeln. Eier, Milch, Salz und Pfeffer verrühren und die Tomaten- und Mozzarellastückchen mit kleinen Basilikumstreifen unterrühren.
Rapsöl in einer Pfanne erhitzen und die Rühreimasse unter Rühren stocken lassen.
Mit Basilikum garnieren.
