Quinoa in einem Topf mit 510 ml Wasser 5 Minuten köcheln lassen, dann zur Seite stellen und 15 Minuten quellen lassen.
Paprika, Zwiebel, Rotkohl, Karotten und Koriander waschen und klein schneiden. Cashewkerne klein hacken. Alles in einer Schüssel miteinander vermengen.
